Fontina is produced in small artisan dairies located in Aosta Valley. Produced with whole raw cow's milk, coming from a single milking, natarul acidity of fermentation and dry salting, with a characteristique technique. The dough is rather soft, with few holes, melting in the mouth with a sweet, characteristic taste. The seasoning is at least 3 months.
