Cheese obtained from raw cow's milk from 2 consecutive milking. The white-colour pasta tending to straw-coloured in the advanced maturing with widespread holes, soft on the palate.
The delicacy and refinement of this jam make it unique in its kind. To combine with fresh cheeses from cow's milk also from mountain pastures, fresh goat cheeses from Piedmont, fresh caciotte etc . It also enhances the flavour of Castelmagno.
