Typical cheese of the Cuneo valleys with a characteristic shape. The square shape, in fact, arises from the past when it was necessary to transport the cheese on the back of the mules to the valley, in square boxes without broken it. Raschera has an ivory coloured paste with a consistent and elastic structure with sparse and irregular holes. The taste is fine and delicate, typically fragrant. Tasty.
The aroma of Moscato enhances the taste of pear pulp creating an exceptional fantasy of aromas and flavours. Excellent to combine with blue cheeses, medium-aged cheeses. Good with Grana, creamy Gorgonzola, semi-seasoned Pecorino, Raschera, Caciocavallo etc ...
