Cheese produced with the milk of pastures in the Formazza Valley. The brown cows from the Alps produce a wonderful milk rich in fat and proteins. The resulting cheese is fat, soft and sweet. The colour of the pasta change from white to straw - yellow depending on the livestock feed. Maturing take place in a traditional cellar for about 2 months.
