Traditional Swiss cheese produced in the region around Gruyères, in the Canton of Friborg. Produced with raw cow's milk, this cheese matures for 4 months during which the cheeses are periodically brushed, washed with salted water and turned upside down. Moisture allows the natural development of molds favouring the maturation of the cheese. This process gives the product its special taste and refined aroma.
