Product of the Bergamo tradition whose translation is "STRACCHINO TONDO"; it belongs to the family of raw cow's milk blue cheese. The compact paste is softer in the under-rind. The flavour is aromatic and varies from a sweeter taste to more flavourful with maturing.
Served on a mixed platter of cold cuts, they are an excellent appetizer; sautéed with balsamic vinegar, they are a delicate side dish for meat. Exceptional combination with the cheese cart; excellent dessert alone or with ice cream.
