Semi-cooked cheese made from cow's milk. Thanks to its artisanal maturing and traditional techniques it is possible to make variations to the pasta which, as it matures, becomes progressively grainier and more compact. The flavour is robust, intense with a pleasant fragrance that is accentuated with aging.
