La nostra azienda è situata tra i pascoli di una vasta area con allevamenti floridi di bovini conferitori di latte in abbondanza da cui vengono prodotti molteplici tipologie di tome. Nella nostra gamma vantiamo produzioni ottenute con latte vaccino, caprino e ovino ed anche produzioni miste ottenute con due latti o tre latti; alcuni formaggi sono a latte intero crudo, altre termizzate. In questa categoria di prodotti viene messo in risalto l’importanza dell’affinatura e stagionatura del prodotto; infatti questo mestiere rappresenta per noi una vera e propria tradizione.
La toma è un formaggio “vivo” e come tale va seguito e aiutato a crescere fino al punto giusto per poter mettere in mostra tutti i sapori e le qualità che possiede.
